TRISCUIT Balsamic, Cheddar and Onion Toppers

Ingredients
  • 1 Tbsp. olive oil
  • 1½ cups slivered red onions
  • 2 Tbsp. water
  • 1 Tbsp. balsamic vinegar
  • 1½ cups shredded cheddar cheese
  • 36 Triscuit Balsamic & Basil Crackers
  • ¼ cup tightly packed microgreens
Preparation
  • Heat oil in small nonstick skillet over medium heat.  Add onions, water and vinegar; stir.  Cover; simmer over medium-low heat 10 min. or until onions are tender, stirring occasionally.  Cool.

  • Heat oven to 400°F.

  • Add cheese to onions; mix well.  

  • Place crackers in single layer on baking sheet; top with onion mixture, adding about 1 Tbsp. onion mixture to each cracker.

  • Bake 4 to 5 min. or until onion mixture is heated through.  Remove from oven.

  • Top with microgreens.

Recipe Tips
  • Make Ahead

    The onions can be cooked ahead of time. Cool, then refrigerate up to 3 days before using as directed.

  • Substitute

    Prepare recipe using Triscuit Rosemary & Olive Oil Crackers or Triscuit Cracked Black Pepper Crackers.

  • Variation

    Prepare recipe as directed, omitting the vinegar, substituting dry white wine for the water, and stirring 1 tsp. Dijon mustard into the cooked onions along with the cheese.
