TRISCUIT Smoky Pull Apart Harvest Flatbread
Ingredients
- 2 cups butternut squash cubes (1/2 inch)
- 1 Tbsp. maple sugar
- 1 cup bite-size apple pieces (about 1 medium apple)
- ½ tsp. ground cinnamon
- 20 Triscuit Classic Wheat Crackers
- 1½ cups smoked cheddar with mozzarella shredded cheese, divided
- ¼ cup dried cranberries
- ½ cup loosely packed baby arugula leaves
Preparation
Heat oven 400°F.
Toss squash with maple sugar in medium bowl until squash is evenly coated with sugar; spread onto rimmed baking sheet.
Bake 20 min. or until squash is tender and lightly browned.
Toss apples with cinnamon in small bowl.
Place crackers, with sides touching in 4 rows of 5 crackers each, on parchment-covered baking sheet. Top with 1 cup cheese, squash, apples and cranberries; sprinkle with remaining cheese.
Bake 8 min. or until cheese is melted.
Top with arugula. Serve immediately.

The squash can be baked ahead of time. Cool, then refrigerate up to 3 days before using as directed.

- Great Substitute
Substitute 2 tsp. brown sugar for the maple sugar.
- Make it Easy
Fresh cubed butternut squash can be purchased in larger supermarkets. Look for it in the refrigerated section of the produce department. Cut it into 1/2-inch cubes if needed so it roasts quickly and is small enough to use as a topper for the crisp crackers.
- Variation
Prepare recipe as directed, except substitute 30 Triscuit Original Crackers for the 20 Triscuit Classic Wheat Crackers, and instead place the crackers in 5 rows of 6 crackers each on prepared baking sheet. Makes 6 servings, 5 topped crackers (95 g) each.
