PREMIUM PLUS Onion Soup au Gratin

ServingsMakes 6 servings, 1 cup (250 mL) soup and 2 topped crackers (26 g) each
  • 1 Tbsp. olive oil
  • 2 large sweet onions, sliced (about 4 cups)
  • 1 clove garlic, minced
  • 2 Tbsp. flour
  • 1 container (900 mL) beef broth
  • 12 Premium Plus Salted Crackers
  • 120 g part-skim mozzarella cheese, cut into 12 slices
  • Heat oil in medium saucepan on medium-low heat. Add onions and garlic; stir. Cook 20 to 25 min. or until onions are tender and golden brown, stirring occasionally.

  • Add flour; cook and stir 2 to 3 min. or until lightly browned. Gradually stir in broth; cook 10 min. or until soup is slightly thickened, stirring frequently.

  • Meanwhile, heat oven to 350°F. Place crackers in single layer on parchment-covered baking sheet; top with cheese. Bake 3 to 5 min. or until cheese is melted.

  • Ladle soup into bowls; top with crackers.

    Prepare using fat-free reduced-sodium beef broth.
  • Substitute

    Substitute Swiss cheese for the mozzarella cheese.
