RITZ Caribbean Coconut-Chicken Bites

  • ¼ cup plain 2% MF Greek yogurt
  • ¼ tsp. jerk seasoning powder
  • ⅛ tsp. lime zest and 1/2 tsp. lime juice
  • 1 avocado
  • 36 Ritz Crackers
  • 340 g cooked boneless skinless chicken breast, sliced, cut into 36 pieces
  • 2 Tbsp. sweetened flaked coconut, toasted
  • 1 Tbsp. chopped fresh cilantro
  • Mix yogurt, seasoning, lime zest and lime juice until blended.

  • Refrigerate 20 min.

  • Cut avocado into 36 slices, then cut each slice crosswise in half. Place on crackers.

  • Top with chicken, yogurt mixture, coconut and cilantro.

  • Substitute

    Substitute fresh parsley for the cilantro.
