PREMIUM PLUS Fried Shrimp with Sweet 'n Sour Mango Sauce

  • ¼ cup Italian dressing
  • 1 mango, coarsely chopped
  • 2 Tbsp. sugar
  • 675 g uncooked deveined peeled extra-large shrimp
  • 2 eggs, beaten
  • 27 Premium Plus Salted Crackers, finely crushed
  • 2 cups oil
  • Blend first 3 ingredients in blender or food processor until smooth; set aside.

  • Dip shrimp, 1 at a time, into egg, then cracker crumbs, turning to evenly coat both sides of each shrimp with each ingredient.

  • Heat oil in large saucepan to 365°F. Add shrimp, in batches; cook 2 to 3 min. or until shrimp are tender and golden brown.  Remove shrimp from saucepan; drain on paper towels. 

  • Serve with mango sauce.

  • How to Purchase and Store Raw Shrimp

    Fresh shrimp should be firm, moist and translucent and should smell like the sea. Avoid those with black spots and any trace of ammonia odor. They can vary in color from grayish-green to pinkish-tan to light pink. Place in a bowl (if wrapped in plastic, punch a few holes in the plastic) and store in the coldest part of the refrigerator up to 24 hours before using as desired. 

  • Special Extra

    Add 1/4 tsp. cayenne to both the mango sauce and cracker crumbs before using as directed.

  • Serving Suggestion

    Serve with hot cooked rice and a steamed fresh vegetable.
