  • ½ cup Triscuit Minis Crackers
  • ½ cup mini cucumber slices
  • 3 sweet mini peppers, seeded, cut into strips
  • 2 strawberries, cut in half
  • ¼ cup fresh blueberries
  • 30 g light marble cheddar cheese, cubed
  • 2 Tbsp. hummus
  • Place all ingredients in lunch box fitted with separate compartments.
  • Refrigerate until ready to pack in an insulated lunch bag or box before walking out the door.
Recipe Tips
  • Variation
    Prepare using your favourite variety of light cheese and/or flavour of hummus.
  • Variation
    For a change of pace, cut peppers in half.  Remove seeds, then fill the pepper halves with the hummus before packing in lunch box.
